TLDR : Answer Summary
UK passport holders can stay in Thailand for 60 days under a visa exemption upon arrival, and they can apply for a 30-day extension at a local immigration office, making a total of 90 days possible.

Can you do your 60 days and then go to Vietnam or wherever and can then come back for another 60 days?
Yes at the discretion of the Immigration Officer holding your passport. You will have issues if you have a history of multiple tourist entries to Thailand in the recent past.

UK passport holders now get 60 days visa exempt, and can be extended once for 30 days, at your local immigration office.
You can apply for a 30 days extention, rarely refused but they're not a given, all extentions are issued at the discretion of the Immigration office where you apply.
Before everyone kicks off people do get refused extentions of stay
