Hi, I’m planning on going to bangkok on a 30 day exemption + 30 day extension. I will be staying at a hotel for the first few days. Can I use the TM30 I get from there to apply for the extension? Or do I need to show them information about where I’m staying for the whole 60 days?

what about the +30 days extension on a 60-day tourist visa? Same? (…1 night / 1st night in a hotel is enough to count to get the renewal at immigration?) [in Udon Thani, BTW]
you can use a hotel to file for the extension, but not your first night. You can only apply for an extension when you have 30 days left in most offices. 45 days in some, and 7 days in a few. So no office will let you apply as soon as you arrive on a tourist visa.
to be clear — after that first night in a hotel I’m going to the home my wife and I have in Issan - and at day 59 I may want to go to immigration and buy another 30 days. If my wife / I haven’t filed a newer TM30 at the house (me having been there 58 days by that time) — is that a problem? …or will they just be ok with the TM30 the hotel filed on that first night (likely in BKK)? …that’s where I was going…
if the hotel isn't in the same province as your house in Isaan, it won't work. You have to use the same immigration office as where your last TM30 is filed.
