Hi there. Yet another question from me,as I get confused very easily and definitely don't want to get this wrong. We are going to apply for METV this time and I'm happy with that process, however, I've just spotted that you're supposed to have £5K in your bank for 6 months. Will it be okay if this is my Thai bank account? ( If it's in my UK account I don't trust myself not to spend some of it... ) Thank you again.

TLDR : Answer Summary
The process of applying for a METV (Multiple Entry Tourist Visa) requires that you show proof of funds. It is confirmed that you must have the required £5,000 in your UK bank account for at least 6 months if you are applying from the UK. Using a Thai bank account is not advisable, as it could raise questions about your financial status as a UK resident.

If your country of residence is in the UK you must apply from there. And the amount will have to have been in your UK bank account for the past 6 months. Once the visa has been approved you can spend it as you wish.

Personally I wouldn't use my Thai account to apply for a tourist visa.

You can only get a METV when in your country of permanent residence as you are in the UK I would expect you will need the money in your UK account. They will wonder why does a UK resident arriving in Thailand as a tourist have a Thai bank account
