Hi. We want to apply for the DTV visa but we have a 20 year old daughter traveling with us. Can we include her as a dependent in our visa? She will turn 21 when we enter Thailand.

TLDR : Answer Summary
The consensus in the community is that a 20-year-old cannot be considered a dependent for the DTV visa as she will turn 21 upon entry into Thailand. Therefore, she will need to apply for her own DTV visa. Suggestions include opening a bank account in her name to meet financial requirements and pursuing a course (like Cooking or Muay Thai) to strengthen her application.
0 baht to her account (under her name) and she can apply DTV on soft power route like Cooking or Muay Thai, unemployed is fine. She needs her own DTV visa

No too old, that said it's pretty easy to get a DTV with a course of some sort, a sponsorship letter, bank statement from the parents for the funding requirement.
Will a sponsership letter from us saying we will sponsor her be enough to get her the Visa? She will have the required BHT 500,000 but she also need to show some income doesn't she?

Anonymous participant if she has the 500,000 baht the her go the soft power route. She doesn’t need to attend the classes. Anyone that says she does doesn’t know what they are talking about. Find the cheapest soft power pay and don’t show up. Your best option

Anonymous participant the sponsorship letter is in lieu of the funding, if she has her own money in a bank account in her name it isn't necessary. There is no income requirement for DTV. If the embassy requests further proof of how will she support herself then you can supply a sponsorship letter, your DTV number and a substantial bank statement in your name.
