Are there any clarity on those that got an extension stamp (valid till 26 October) with an embassy letter prior to the original Sept 26 cut-off date  to get the stamp adjusted to End November?

Yes I applied with embassy letter got a under consideration stamp and had to return there Oct 7th and then got a stamp till nov 30th today in Bangkok

Do I need to make an online booking again? And if so, what would the choice of “reason” be under the option selection on the booking site?

Yep, IF you used an embassy letter and got an under consideration stamp THEN went back and got the extension of stay stamp dated to Oct 26th you CAN go back to the immigration office and they will adjust the stamp to the 30th of Nov. Like this ;)
