Hi there a friend of mine from Honduras has a ticked for Monday 7 am from Mumbai to Bangkok Thailand, she has not yet received her visa but a bit nervous because if she does not have by then, she will not be able to board the plane to Bangkok, is there a way to get any customer service or emergency visa over the weekend ?

No, there is not any customer service or emergency visa over the weekend. Only the embassy can issue the visa.

Unfortunately, with a Honduran passport she is not eligible for visa-exemption or visa-on-arrival. She will be denied entry and sent back from the airport in Bangkok, and she will likely not even be allowed to board a flight from India to Thailand without a visa.
