Looking for suggestions for a DTV category to apply under. There are so many options and I'm trying to narrow it down. What are some of the easiest ones to get?

In reality, there are 2 options : Digital nomad / freelancer OR soft power (muay thai / cooking, etc...). If you have the money in the bank and work remote, go for the digital nomad option.

thank you! Any reason why the digital nomad would be preferable to soft power? I was thinking about going for Muay Thai. They both require 500k in the bank, no?

The digital nomad visa doesn't require you to pay for some crazy expensive course. Further to that, what happens when your course is over? We don't know if there will be checks on that but the digital nomad category, if you already work online, is preferable for those reasons.

for soft power, you actually need to book and pay for a course of education/treatment/whatever.

There are likely to be agents who'll be able to 'fix' a soft power solution for you, but if it's fraudulent, you'll be living in risk and could be deported any time.
