You could apply for ‘soft power’ DTV and say, that you want to learn yoga in Thailand or cooking or whatever
But working here will get you in troubles (unless you wish to teach English, but that’s a completely different visa)

The only non Thai I know running a fitness business runs it totally online with clientele around the world. He's based in Phuket and trains and does personal coaching for high net worths remotely. Does not train on the ground.

You do personal training and teach yoga online? You would need to show proof of that you do so and also proof that you have permission from your clients to work online from Thailand.
that is not allowed since the DTV prohibits you to work with Thai clients in Thailand or for Thai companies. You will have to prove that you have clients outside Thailand, maybe have a portfolio and a website offering your services as an online personal trainer, I'm thinking something like that could work.
