Went to two different Immigration offices in Phuket this week hoping to get some information about renewing in-country. Neither of them had any idea about cost or requirements 🙃.

I (obviously) meant "extension" not "renewal." Yes words have meanings. They also get jumbled around in my brain and probably shouldn't make you so frustrated.

What is the point to have a 5 years visa if you looking to renew every 180 days, when you simple can go outside the country and come back with another 180 days every time?
People often use these terms interchangeably. As long as the rest of the context indicates which one is desired, it's easy to provide the correct advice.
Different offices. There are 2 of them now. One in Krabi and one in Samut Prakan. The latter def has less onerous requirements regarding accommodation documentation. They both needed all the original paperwork including 500k bank statements
