Does anyone know how the sponsorship letter for DTV works? I have a remote job but not the 500k THB at the moment, would it help?

Talk to a visa agent. People mean well here, but visa agents have the experience and provide a lot of free information.

For sure, things work out strangely here. However, the visa agents with 1000+ 5 star reviews have given me the best advice and others as well. Now my go to is asking 2 or 3 highly rated visa agents for advice over WhatsApp or Line. Usually the information is free. And if all that information lines up it is pretty solid. Then a call to an English speaking lawyer is $30. ​In my very limited experience, that makes life much easier than, and often provides better information than what I get on groups. If you have a better method than this, I am sure the group and myself would benefit greatly from it.

The DTV is less than a year old and requires one to apply outside of the country. It is very different than the type of visas one can convert to within country. I am guessing that those agents with 1000* 5 star reviews received those reviews based on retirement and work-related visas. Furthermore, each embassy has unique processes. An agent isn’t going to know the process for each embassy. I would suggest the OP to join the DTV Facebook page and look at posts related to others who have succeeded and who have failed in using sponsorship. Figure out if certain embassies seem to accept more often and sponsored by who.

Generally they'll only accept sponsorship information if it's from someone related to you. And then you'll need to show both how you're related to this person and the financial proof from that person. Even then it's still no guarantee. Some embassies might not accept sponsorship at all.

my sister told me she can help with the sponsorship letter and bank statements, I guess I reach out to some embassies and ask? I’m in Thailand at the moment, would need to leave for a bit to apply I guess, is the application site general and you select the embassy? I was thinking of choosing one in a country close to Thailand.

the website is generally generic, and asks you where you are physically located. Once you select where you are, it will tell you which embassy will process the application. Then you upload the information and proof of location

thanks, so it’s all online? I could apply for the Spanish embassy to review even if I’m not there? (I’m a citizen) Otherwise I’d probably do an Asian one but will need to prove it with a hotel reservation or something.

You need PROOF OF PHYSICAL LOCATION. You cannot apply from anywhere. And they do random checks to ensure that you are there, including calling you into the embassy for an interview. It's not a game, or an invitation for fraud.
