Hi. I’m an Australian, I’m traveling in Europe now., and I don’t intend to go home anytime soon. I’ve just lodged a DTV application online and I’ve chosen the Thai embassy in Sydney. My question is, will they call me to request a face to face interview? Do I must be in Australia during the visa application process?

If you have applied in Australia, whilst being in Europe, you will quite possible be rejected and forfeit the money. A face to face interview is unlikely, but if they request it and you don't comply, they will also likely reject the application and you forfeit the money. You could have simply applied in the country you are currently in. Let us know how this plays out.
Usually they ask for proof of residence before / during application if you already applied without doing that and wasn't using an Australian VPN it's highly likely they are going to refuse or ask for the above... If they do I might be able to help as I've done similar for a Canadian client but no experience with AU embassy.
When we applied in Australia two months ago we had to show evidence of being in the country. We showed drivers licences with our address and our rental contract but that wasn't enough and they asked for more evidence (which was our last entry into Australia and latest visa). So yes you very much need to be there.

The embassy in Canberra told me I could leave the country after I’d applied (not sure about Sydney) but you are meant to be in Australia when you apply and Thailand can cancel your visa at any time if they become aware that you werent
Anonymous participant 383 that is interesting, some embassies have made it clear that you have to stay in the current jurisdiction the entire time. I would assume MoFA rules would be the same, but guess not
DTV_BegPecker however lying about where you are when you apply is a different kettle of fish, and if Thailand were to every figure out that you lied in the future (and with the advancement of ai and surveillance etc..) they have every right to revoke the visa
DTV_BegPecker I was aware of that from this group, which is why I directly asked the embassy I was applying through as every embassy has different rules and different fees
