I successfully applied and received my non-B in Penang a few weeks ago. As luck would have it I have been offered an amazing job at a different school.
I have heard conflicting stories and would love some advice. Am I right in saying the initial Non B is not linked to the school but the extension is? And when I get my work permit would I be able to extend the Non B that I am on now even if it is from a different school?

Okay, IF there is a company name written on the visa itself you cannot use it to get an extension IF you change jobs :/ You need a new 90 day Non-B with the correct company name on it.
The good news is you can stay for the 90 days that visa gives you because even if you quit an employer can't cancel a visa.
This is a Non-B issued from Vientiane that is company specific; note the thai sticker above the visa. Most consulates just write the name of the company on the visa itself.
, (y) It does take cooperation between your old and new employer but it can be done. unfortunately, many times people leave jobs on bad terms with their employer making it not work out trying to switch over in country :/
Some consulates will write down the name of the school on your initial Non B visa. If the Visa is not linked, by this writing you can apply with the work permit and papers from your school for the Extension of Stay. This Extension of Stay is than linked to your employer.
