Hey 👋🏼 I’m planning to fly to Thailand from Vietnam for around 75 days in a few days, and I understand that the Covid extension will end at the 25th of July. if I will get a 30 day Tourist Visa when I enter, could I extend 2 more times for total 90 days or it will be only 1 extend for total 60 days? If not what is my best bet?

You don't get a 30-day Tourist visa when you enter, this is something you have to apply for beforehand. What you might get is a 30-day visa exemption or similar. This might be eligible for one 30-day extension.
You won't be able to use the Covid extension because you have to take regular 30 day extension first, so by then the Covid extensions will be done with.
Just get a tourist visa in Vietnam then extend that while you're here and you'll get 90 days.
You can either do it there before you leave or leave Thailand after 60 days and get another visa exempt. Up to you to decide which one is more convenient.
