TLDR : Answer Summary
An Australian passport holder with a Non-O spouse visa nearing expiration in Thailand is exploring options for extending their stay. The advice given suggests that re-entering Thailand on a tourist visa after a border run is not straightforward, as obtaining any visa typically requires processing time of 2-3 days at Thai consulates. Additionally, if the individual leaves and re-enters, they may have to restart the visa process completely, which means applying for a new 90-day Non-O visa. While a 60-day extension for visiting Thai family is available if not already used, it's essential to understand the implications of exiting and re-entering without a valid visa.

You can't get any visa in one day, as all the Thai consulates in SE Asia require 2-3 days for processing.
If you're talking about doing a border bounce and entering with no visa at all, then as long as you're from one of the qualifying countries and you haven't already entered Thailand at a land border 2 times without a visa in 2023 you can do this.
You should also be eligible for a 60 day visiting Thai family extension if you haven't already gotten one.
