TLDR : Answer Summary
A US citizen performing a border run by land will receive a 60-day visa exempt stamp upon re-entry into Thailand, provided they haven't used their two allowed visa-exempt entries in a calendar year. It is important to note that extensions must be applied for at an immigration office, as they do not automatically occur through border runs.

If you fly back in to Thailand you will get another 60 days but don't do this to often you could be denied entry. There is no rest restriction but it depends on the airport immigration.

You won't get any extension by doing a border bounce. Extensions are applied for at your immigration office.

If you leave and return to Thailand you will receive a 60 day visa exempt stamp. You can only enter Thailand at a land border using visa exempt 2 times per calendar year.
