Just curiosity about procedures at Ho Chi Minh embassy

I have been asked for extra documents: 

- Proof of being in vietnam, which i submitted already with the application, and i did add my flight and accommodation booking and payment

- email confirmation sent to the embassy from the muay thai school. (A 10 page document with all references was already submitted with the application)

- photos of all pages of my passport

Questions: 

Is there any soecific reason about these requests of submission?

Does the embassy usually requests extra documents twice?

It would appear that they want the Muay Thai documents sent directly from the gym, not from you. I guess this is for verification purposes.

They want to see all pages of your passport to confirm you have remained in the country throughout your application being processed.

If they ask, it might be that first documents did not meet the requirements.

Make sure that all is in order and sent again, be hopefull it is accepted and you got the DTV or an interview.

Alternative is tell them you did send once and not sent again, most likely outcome is denied application.
