I have a Single entry Non b extension stamp valid until April 2021. I need to travel urgently to Europe and stay there for 2 weeks . Do I need a COE to be able to return . I know I need a re entry stamp . But what else do I need ?

You have visa and WP then it's just the whole COE process and the paperwork in teh attached photo needed.
Haven't heard anyone who had to show any paperwork from the company unless they was seeking non B visa but in your case you already have the visa so it's just as mention the COE and the other paperwork. Plus re-entry stamp
. If you don't have a WP you may not be eligible for re-entry at this stage. Check conditions no.3 in the picture. Check with embassy beforehand. If you can't re-enter on B visa, you have the option to come back on a TR and then convert within the country.
Ok that's a issue I can't say with confidence what to do so I would for sure contact my local embassy ib the country of arrival first on phone but nonatter what I ask for the reply in a email to ahev as proof I. Case they say you are good to go but to be honest I do think you would need aleast a WP 3 form from the labour office in Thailand and that's some your company has to take care of unless it's you're company then it means you hope that helped a bit even it wasn't not a clear answer.
you might need to buy a re-entry permit at the airport before you fly out. If you don't then your work permit may become invalidated and you'll be starting from scratch.
