Hi, I'm leaving Thailand to renew my passport. I am on an education visa till end of Jan 2023. I also have a re entry permit already in my passport. My question is what will be the requirements for me to enter back into Thailand other than showing my old and new passport together?

Depending on which country you are from you can renew your passport at your embassy in Thailand.

Show both passports when you come back so they will stamp you in on the new one. THEN once you're back, go to the immigration office that issued you the ED visa extension and get the stamps moved to the new passport.

as far as entry requirements google it,

you need to show your vax history IF asked when you come into the country and if you're not vaxxed you need a negative covid test within so many days of flying in.
