I'd like to know is there's an expert on how to fit in the requirements of Non-b and Work Permit when the Job you're offered doesn't match your degree and experience.

TLDR : Answer Summary
The conversation discusses obtaining a Non-B visa and work permit in Thailand when the job offer does not align with the individual's degree and experience. It emphasizes that the company providing employment will handle the necessary documentation for the visa and work permit. If the employer believes the individual qualifies, applying for the visa should not be a problem, despite the mismatch in qualifications.

Yep they do, no problem with the company, they're totally okay, it's about the documentation I'd had to provide for the visa and work permit.

from what I gathered, they ask for degree and/or experience in the field, maybe I'm wrong and it would be great

You need to have proof you applied for a work permit to get a 90 day Non-B visa at most consulates

I think you'd find out pretty quick if they wouldn't accept the application for the work permit.

Yes Tod, I get all that.

My issue is more about the ministry of labor and if I could be rejected because of degree and experience not matching the job.

the company should provide you with documentation to take to either the immigration office or a thai consulate in another country and apply for a 90 day Non-B <- business visa.

They should also tell you if your degree needs to be certified by your consulate or anything else

The company you're going to work for provides the documentation so you can get a non-B visa and a work permit.

There's no "expert" required to shoe-horn your skill set to the job. Either you meet the requirements to get the Non-B and work permit or you don't. If a company is willing to hire you they must believe your qualifications are sufficient to get the visa and work permit.
