Just finished up working here on a WP and BOI visa for the last 26 months. I want to return to have a holiday, ship and sell some stuff. I have thoughts about a trip back to the UK (from there) to get a METV but just seen this requirement 'If employed, a letter from employer confirming that you are employed by them.

or

If self-employed, copy of your HMRC SA100 or SA105 Self Assessment Tax Form for the latest tax year.

or

If retired (at any age) and receiving a State or Private Pension, confirmation of receiving such pension by providing a copy of the Pension Statement or similar which must bear the applicant’s name and address'.

I am not employed anymore, don't pay UK tax or retired. Anyway round this?

TLDR : Answer Summary
The user is seeking guidance on obtaining a METV (Multiple Entry Tourist Visa) for Thailand after being employed under a WP and BOI visa. They mention the challenges of fulfilling the requirement for proof of employment or retirement to obtain the METV. Commenters suggest various alternatives, including contacting the consulate, applying for a single-entry tourist visa instead, or visiting the Perth consulate for a 6-month METV with minimal financial proof.

I just emailed the consulate in Perth asking if an american (myself) and my imaginary british g/f can get a 6 month METV from them by meeting the proof of funds (9K AUD) proof of onward travel and by paying 300UAD for the visa.

No idea if it is factual or not.

I would check before going.

could be. I may try an email to them later and see what they say about a UK passport holder obtaining one there. Its a bit of a journey and the need to get an Australian visa to get knocked back.

they held a Hungarian passport and I think that is what caused them not to get the visa. :O

email or call them and see what they say.

OR

just go to a nearby consulate and get a single entry tourist visa

OR

go to Perth or one of the other consulates in Australia that offer a 6 month METV without proof of residence with just 9K AUD in a bank account.

wasn't there a recent post that Perth and I believe, Melbourne now require residency in order to get a METV? I believe a copy of the email from Perth was posted.
