What can I use as a substitute for the employer's guarantee letter when applying for a METV at the Thai consulate in Hong Kong?

I plan to make a METV in Thai consulate Hong Kong. A "guarantee letter from the employer/organization" is needed from their checklist. But I don't have a job at the moment so "employer" is out of question. Anyone knows what can be accepted as equivalent? Anyone got their METV without one? Thanks.
