Any updates on what's going on in Chiang Mai with volunteer visas? Has anyone been able to extend with/without a work permit?

TLDR : Answer Summary
There have been updates regarding volunteer visas in Chiang Mai indicating that the labor office is issuing work permits again, but they are currently only valid for three months at a time. As long as the work permit is valid and current, extensions should be fine.

Any idea if this is likely to change again soon?

This is Thailand? That's all I know. They are also scrutinizing paperwork a lot closer, and have been asking for documents they haven't in times past. Your organization should be aware of what they want by now.
