I’m planning on staying in Thailand for a total of 90 days (potentially visiting other neighbouring countries along the way) should I apply for a visa online or do this in person? I leave in 3 weeks and Im just so confused about the visa process

Looks like you're from UK so go for your 60 day tourist e-visa, however, as you state you want to visit surrounding countries then you could just come in visa exempt and just do each visit before your 30 days is up. If, for whatever reason, you decide you want to stay in Thailand past 30 days at some point, you can go to immigration and get a 30 day exstension there

If the Thai consulate in your country has switched to the evisa system, applying online is your only option.
I recommend you hurry. It can take anywhere from 2 days to 2+ weeks.
If your country doesn't use evisa, then you may already not have enough time.
