If I want to get to Thailand next week for a stay of 45 days or so...am I better off turning up and getting the 30 days on arrival then applying for an extension or applying for an e-visa 60 day tourist visa. How long does that take to process if so? Just conscious tight on time to get a visa and thai pass sorted..

SETV is 60 days, and can extend another 30 days for 1,900฿ at an immigration office. Visa exemption is 30 days, and can extend another 30 days for 1,900฿. 90 days instead of 60 total.
If you are 100% sure you only need to stay 45 days, then VE should be fine. If you are here and plan to stay a few weeks more, and you chose the VE, then that's that.
I applied for the visa at the beginning of Nov still haven't got it. Applied and got my Thai Pass in two days. Flew in today no problems and will apply for visa extention
If you apply right now through the evisa system, it's quite possible you could get the visa by next week. Now that you don't have to mail your passport in, reports are about 3 days on average.
The biggest difference will be you don't have to spend a day going to your local immigration office in Thailand and deal with getting an extension.
Well worth it in my mind, and you don't even need to wait for the visa to apply for the Thailand Pass

If you have 30 days exempt by passport you can extend 30 days. EU was like this but I would suspect UK is same. Hopefully longer if it is bilateral in the future. Sweden used to have 90 days before EU
If I put in my application that my arrival date was the 6th but it ended up being the 8th would that be a problem? just want to get all my ducks in a row before pulling the trigger
For Visa application it doesn't really matter just try to make what you submit for your flight match what you put on the visa. But once the visa is issued it's good for 90 days to enter Thailand regardless of how or when.
