When entering Indonesia, they didn't stamp my passport. Instead, they issued a digital entry document. Is this what I use as the "document indicating current location" for the DTV application? Thanks.

You have get into indonesia with autogate right? If that happen you should open indonesian immigration website which you fill up and paying for Visa on Arrival. There is have information about your date of entry and include the date you should departure from indonesia. It should be clear and acceptable by Thai Embassy

Yes, that "arrival card" is what they want.

Google map screenshot with blue dot and GPS coordinates,

hotel booking,

nor paid deposit recipe, with date and signatures, on a hotel pillow together with room key was not enough

There are no specifications from the consulate how you prove your current location and if this document is your entry stamp, then that is the proof and then you take the hotel booking and then that's it.
