TLDR : Answer Summary
The OA visa is valid for one year from the issue date at the embassy or consulate, not from the date of arrival in Thailand. Holders can enter Thailand multiple times within that year, and upon each entry, they will be stamped for a stay of one year or until their insurance expires, as long as they provide proof of insurance for the second year.

just to clarify. On OA visa, I can enter as many times as I want. If I exit and enter Thailand just before the one year is over, I will be stamped for in an additional year? With insurance proof of course for the 2nd year?
Non-Immigrant OA visa is valid for 1 year from being issued at the embassy/consulate. That means you have one year to "use" that visa to enter Thailand to be stamped in for 365 days (or until your insurance validity if it comes earlier). You can enter Thailand as many times as you want.
You can enter Thailand within the validity of that visa sticker (even if you enter on the very last day on your visa sticker), and you will be stamped in for 365 days or insurance validity. This is how others manage to stay for almost two years from one Non-OA visa.

You bring Non-OA visa (if it's on PDF) and an insurance policy on paper every time you enter Thailand.
