How far out should you book a visa before leaving. Family of 4 looking to go for 1-2months in December next year.
Answer summary
When planning a trip to Thailand for 1-2 months in December next year, it is advisable to book your tourist visa approximately 2 months in advance of your departure. A tourist visa is typically valid for 90 days from the date it is issued, and you can apply up to 90 days before your planned entry. Additionally, most nationalities can enter Thailand without a visa for 30 days and can extend their stay by an additional 30 days if needed.

If just one month, many nationalities won't need any visa at all. And if you decide to stay longer, you can prolong by 30 days in Thailand.
Assume you're talking about a tourist visa. A tourist visa is valid for 90 days from the date it is issued by the embassy. So you can apply up to 90 days before your trip. I would apply around 2 months early just for flexibility sake in the event you have to push back your trip or a flight is cancelled or something.
Once you enter Thailand with the visa, you'll be given a 60-day entry stamp.
