Does travel vlogging count towards remote worker or freelancer status? I do meet the financial requirements, but I’m not actively making money off the vlogging

very risky, 99% they will reject, they will assume you will use thailand also for vlogging to make money which is against the DTV visa, wish you good luck though and if you are able to get the DTV let us know...

For workcation they're almost certainly going to ask for proof of income.

If you have a company, you can write yourself a remote work contract. But when they ask for tax reports, maybe trouble if not income
