I've looked through relevant posts but didn't find this exact point covered:
does a UK passport holder visiting Thailand for 2 weeks need to get a visa on arrival? Or would that case count as Visa Exempt?

TLDR : Answer Summary
UK passport holders do not need to obtain a visa on arrival for a two-week visit to Thailand. They are eligible for a visa exemption, allowing them to stay for up to 60 days without needing a visa. Travelers should ensure they have a valid passport (with at least six months remaining) and may need to show a return or onward travel ticket.

You will get at arrival a visa exemption stamp for 60 days.
You need nothing to do as showing your valid passeport for 6 months at least and the flight ticket from flight arriving.
The RTE London website states “ Foreigners entering Thailand by any means under the Visa Exemption scheme are required at the port of entry to have proof of planned travel (confirmed air, train, bus, or boat tickets) to leave Thailand within 60 days of the arrival date. Otherwise, a visa must be obtained before entering Thailand.”
Without any abusive travel to Thaïland no immigration officer want this proof. Maybe they will put you away and than ask you to have the right visa to stay.
Yes.... for the airline company you might to show the ticket leaving Thaïland within 60 days.
