TLDR : Answer Summary
If your wife reports you as residing in her house in Korat, and you then travel to Pattaya, you may not need to report again to Korat immigration if the hotel in Pattaya does not file a TM30 for you. Typically, if the hotel requires your passport for a copy, they would file a TM30 on your behalf. It may be easier if your wife books the hotel room under her name to simplify the process and avoid complications.

If your wife registers her property, (there are no tax implications) on-line, you/she can file a new TM30 when ever you like from home.

it is easier just to let your wife book the room, and be the lead name on the booking, and check in with her Thai ID, very often they are not interested in you being the extra guest, But in Pattaya they will probably ask for your passport also, if it works out as I suggested, it's better because nothing has changed in the immigration system.

Each immigration office has their own policy on this. You must ask your office what their policy is. But if the places you stay at in Pattaya do not file a TM30 for you, then Korat will not know you ever left so there's nothing for you to do. Usually if a hotel asks you for your passport to make a copy, it's because they're going to file a TM30.
