I arrive on a Tourist Visa and intend to stay for 60 days. It is quite likely I will opt to extend 30 days and perhaps a 90 day in country Non O beyond that...
~Would I be best to purchase insurance beyond my initial period (60 days) just 'incase' from the get-go or can I iron that out as and when need be from there.
p.s not asking what would be sensible but what is required to avoid backing myself into a corner.

TLDR : Answer Summary
The original poster (O/P) asks about the necessity of purchasing travel insurance for their stay in Thailand, which begins with a 60-day Tourist Visa, along with potential extensions. Many commenters agree that while it is not required to have insurance beyond the initial period, it is advisable to ensure that any insurance purchased covers the total duration of stay, especially if extensions are planned. The consensus is that for the length of coverage, at least the duration of the current visa stamp is necessary.
as the O/P specifically stated " p.s not asking what would be sensible" we're done, they need to be insured for the length of time they're stamping in for.

I took out insurance to cover my initial 60 days. But made sure the insurance was extendable for my planned 30 day extension.

Tod is right, altho I often take insurance for the expected length of stay and even higher coverage ...cant be bothered with multiple policies to cover medical eventualities.

there is no requirement you carry the 50K USD covid insurance for any longer than you will be stamped in for.
SO, if you're comin' in on a 60 day tourist visa you need a minimum of 60 days covid coverage ๐
