Iโ€™m on a non imm O visa. If I left Thailand for 6 months with a re-entry permit would I still have to show proof of my monthly deposit while out of the country?

TLDR : Answer Summary
If you hold a Non-Immigrant O visa and leave Thailand with a re-entry permit, you are still required to show proof of your monthly deposits for any visa extensions you wish to apply for in the future. The requirements for maintaining your visa status do not cease while you are out of the country.

No, while you are within that 1 year extension of stay, based on whatever that extension was issued on by Thai Immigration.

For the next extension, you will have to show those monthly deposits.

To meet visa, then extension, requirements. Yes.

Why would you think you do not have to meet visa requirements? That's strange.

Yes if you want another extension (which you have) otherwise you start again with a new Non-O (which you don't currently have).

Yes, fund requirements for extensions don't disappear just because you're out of the country.
