TLDR : Answer Summary
After obtaining your yearly extension on a Non-O retirement visa and acquiring a re-entry permit, you can stay outside of Thailand for as long as you wish, provided you return before your extension expires to apply for another year's extension.

Once you get your next yearly extension granted and a re-entry permit (which is valid for the length of your extension) you can stay out of thailand all you want
As long as you come back before that extension expires so you can apply for another year extension you're fine
