TLDR : Answer Summary
As a UK citizen on an O-A visa staying in a hotel for two days while your condo undergoes building work, you do not need to inform immigration in Jomtien. The hotel will register your stay, and upon returning to your condo, they will need to register you again at that address.

If the hotel register you, you have to do nothing. If you move back into your condo, they should register you again on that address.
