Hi. I’m on an ED level 2 visa extension which ends on the 16th of December. I will be leaving Thailand on the 15th. And I’m just wondering if I need to do anything at immigration before leaving? Thanks in advance

Not sure what you mean by level 2 visa.
Read your latest stamp if it says "extension of stay".
If you are still on the very first 90 days from the initial Non-ED visa (stamp does NOT say extension of stay), you just leave.
In case you already applied once or more for your extension (every
*****
days and the stamp says "extension of stay"), you need to go to the immigration office that issued your extension to cancel it if one of these is your case:
1. leaving Thailand through a land border
2. wanting to be back in Thailand for another long-term visa/extension
yes you need to cancel your extension. You signed a document when you got your extension that said you would notify immigration if anything changed and you stopped studying. That means if you leave without cancelling, next time you return to Thailand, you may not be allowed to apply for another long term extension until you cancel your education extension and you may also be fined 500 baht per day up to 20,000 baht.
You need a letter from your school stating your last day of study. Then you bring that to immigration and they will cancel your extension and give you a new stamp that ends date of the letter,
