TLDR : Answer Summary
When returning to Thailand on an OA visa, it's advisable to start a new health insurance policy upon arrival rather than extending your existing coverage, as your stay will only be valid until the current insurance expiry date.

You'll only be stamped in up to the date of expiry of the insurance, so it's better to start a new policy from the date of your arrival, so you get the full year

Shouldn't you ask your insurance company if you can extend it? You didn't even say which insurance company you're using.
