We are arriving in Bangkok on the 11th November Australian passports. With 60 day visa except do we have to go to immigration at airport for this. Can’t find anything on Thai consulate website. Thanks in advance

There are desks for Visa on Arrival but ignore these as you qualify for Visa-exempt so just go to passport control and hand in your passport and boarding card. You will be stamped in for a free 60 day entry
You may also be asked for proof of your accommodation. Also it is not a 60 day visa or a visa of any kind. It is a 60 day Visa Exempt stamp that Immigration put in your passport.
that is written on the sign at the passport control at least the last 2 3 years : passport boarding pass and visa if applicable. So yes they need and want to see a boarding pass
you cannot immediately extend. Some immigration offices allow you to apply for an extension when you have 45 days or less left, so you'd have to wait at least 15 days to apply. Some immigration offices only let you apply during your last week, so you'd have to wait at least 53 days there. It all depends on the office you'll be using.
