TLDR : Answer Summary
Yes, it's possible for US passport holders to do a Mae Sai border run on a Sunday, as borders are open on weekends and public holidays. However, it's important to note that there is a limit of two 30-day border runs using Visa Exempt Entries within one calendar year. If you have already done two runs earlier in the year, you won't be able to enter again without a visa.

Limit is TWO 30 day border in one Calendar Year, so if you did one in Jan and one in Feb it is a NO GO, otherwise you should be fine unless you have a not cancelled work permit or an extension of stay based on study, that you should cancel before you go out.

This is the memo, mentioning the countries involved. It is 2x entry with a Visa Exempt Entry in a Calendar year with your passport. Does not matter if entry 1 is from let's say Malay border and entry 2 from let's say Myanmar border. If you try the third time, you will be denied entry and have to walk back to where you came from.

Limit is when using land borders 2 Visa Exempt Entries in a Calendar year (1 Jan - 31 Dec).
