Is it possible to do a Visa exempt extension within a week of arrival? I will be somewhere in the country nowhere near an Immigration office when the 30 day stamp runs out so I'd rather do it before I leave Bangkok.

In Bangkok you can go directly to the immigration office and get the 30 day extension for 1,900THB….this is contingent on when your plane arrives and you will make there during their normal work hours of M-F minus Holidays….

Same reason why you didn't provide (1) a website link to the official source of information in your first post, (2) exact address of the immigration office to extend stay, (3) exact operating hours of that immigration office... 😉
not every document is on the website. If there is no current TM30 on file when you try to apply for your extension, they will make you produce one before they will give you an extension. This is most common with people staying in Airbnb rentals, as many of those owners don't file TM30s like they are legally required to do within 24 hours of arrival. Basically if the hotel you stayed at made a copy of your passport page they filed a TM30.

Yes. I believe only Jomtien allows extension application in the last seven days, everywhere else is 30 days (some are 45 but that won't affect you)

Most offices will allow you to apply for an extension when you have 30 days or less left on your existing stamp. Since visa exempt is only 30 days, you can apply for an extension immediately at most offices.
Jomtien/Pattaya and Koh Samui offices both only allow you to apply during your last week though.
