TLDR : Answer Summary
It is not possible to change from a Non O-A extension to a Non O visa while remaining in Thailand. To switch visa types, one must leave the country and apply for the Non O visa from an embassy outside Thailand or enter on a tourist visa and then apply for the Non O visa at a local immigration office.

No you have to leave and start over which means they’ll want the 800k in your bank account

No, you cannot. You have to leave Thailand without a re-entry permit and start the process all over from scratch again. Either getting an initial Non-O visa at the embassy outside Thailand or entering Thailand on tourist status to apply for an initial Non-O at the local immigration office.
