Hi, I've heard that employers can help us get an extension up to two months once our work permit is cancelled. Can we apply for that extension by ourselves or only employers can do it for us?

There is no grace period. If you have an extension of stay based on working and the work finishes you need to leave the country. Prior to the Covid crap you could apply (in some offices) for an extension but it would be denied, leaving you 7 days to leave the country. It’s not a 7 day extension. Now during Covid they are not requiring anyone to leave, but you must apply for an extension of stay based on “unable” (read unwilling) to travel. Most offices are giving you 60 days.

nope, it's not automatically. You need to apply for it and get usually 7 days extension to leave. Today you might apply for covid extension, but that would be a separate story.
Actually, with BOI, the employer needs to cancel work permit from the system. Then, the employee needs to go to the immigration to get current visa canceled and get a new stamp. So, I think yes, we can call that stamp an extension.
