Hello all, I need your advice sincerely if I resign from a Thai limited company and won't be able to leave the country in 7 days, would it be any problem if I apply for a covid extension visa for 60 days on my own? Thx and Best regards!

So you are on an extension of stay based on employment, not on the first 90 days from the visa, is this right?
If so, go to the labor office to cancel your work permit, then go to the immigration office to cancel your extension of stay as Robert already explained.
At the immigration office, immediately apply for a Covid extension. The best scenario is they approve your Covid extension. The worst is they denied your application and stamp you for 7 days to leave the Kingdom, and this 7 days stamp would start on the day you apply.
Again, the Covid extension is not a promised thing. Your application may or may not be approved.

Canceling them does not give you 7 more days. As Robert said, you must apply for, and pay for, a new extension. If it is denied you will get a 7 day stamp.
You have to cancel your work permit and take the documents to the Immigration Office to cancel your Extension of Stay based on being employed.
You can try to apply for a new Extension of Stay based on being unable to travel, if not approved you wil get a new stamp: application not approved and 7 days to leave the country. Land borders are open, I guess it is possible to leave within 7 days.
