Any experience with applying at a in-person-consulate (or even eVisa) while an eVisa application is still in progress? I'm at a point with my eVisa application where I can't supply certain documents and I can't find a cancellation option online. Can I just leave it open or try to contact the consulate to cancel it first?

I am not sure this is the answer you are seeking. If you have started the online application but decided you don't want to proceed and cancel it, the system will automatically remove/delete incomplete application after 14 days. See screenshot below.
I'll share later when I have a visa, because I haven't seen this case online so far. Basically remote work documents (also lots of others like a long period of financial statements that I have) when I specifically went the soft power route.
