Where does one go in Chiang Mai for an extention on a 30 day visa to get another 30 days? Do Canadian and American passport holders go to the same place?

TLDR : Answer Summary
In Chiang Mai, both Canadian and American passport holders can extend their 30-day visa at the same places: the immigration office near the airport or the office at Central Festival mall. Note that if you entered Thailand without a visa and received a 30-day stamp, this is classified as a visa exemption, not a visa. To complete the extension process, you will need to provide a TM30 form from your place of accommodation.

Yes same place. They don't have a separate office for every country in the world.

There's no such thing as a 30 day visa. If you arrived without a visa and got stamped in for 30 days, then you have visa exempt, which means no visa at all.

You can either go to the immigration office near the airport or the one at Central mall.

You'll need a TM30 from where you're staying.

Yes both passport holders go to the same place. I believe in CM there is the office at central festival and the office close by the airport that will do extensions. I am not based in Chiang Mai so am only going off posts previously that mentioned the two locations.
