Can you always extend a 30 day tourist visa for another thirty days?
Maybe want to go to Burma for 30 day visa and extend it for 30 days in chiang mai after.
Did the extension in chiang mai before with my past tourist visa that I got at thai embassy in the Netherlands.

Yes, I did exactly that. I had a tourist visa for 60 days and extended that in Chiang Mai. After that, I went to Burma and got one for 30 days and extended that one again in Chiang mai.

Both of the above can be extended for 30 days at your local Immigration Office.

A Single-Entry Tourist Visa is obtained from a Thai Consulate abroad and gives you 60 days when you enter the kingdom.
I think what you are talking about is a 'Visa Exempt' which you get on entry to the kingdom, which is for 30 days.
