Successful COVID extension this morning at Muang Thong Thani. Entered visa exempt, 1 month extension, 2 month COVID extension and today had another 2 month COVID extension added on to end date of existing stamp. British passport. Took in screenshot from British Embassy re. not issuing visa letter and screenshot of hotel's TM30 entry. Scans and paperwork all completed in advance, but not signed. No issues at all, not a single question asked. No proof of onward travel. Was just warned that I will not be able to extend again (other than 7 day get out of Thailand extension). Contrary to what you might hear, my two experiences at this office have gone perfectly and staff always lovely and kind. Go prepared and don't be a pain and you should be fine.
