And is it possible to obtain the DTV in time before November 15?

My gym gave me all the documents within half a day and when the embassy asked for extra documentation, the boss provided it immediately besides of keeping in touch with the embassy to keep the process smooth. The time is really tight, embassies suggest to apply a month prior because the process could be delayed by the request of extra documents or an interview. I'd try to mail or call the embassy and check with them whether there's enough time or not.
My confirmation docs amounted to about 30 pages. Letter of course, business certificate of gym, passport pages, national ID of owners, class schedule, pictures of the gym, proof of muay thai accreditation...
