the short answer is no, you can't apply for a new VISA after you cancel your work permit and then go cancel your extension of stay based on employment at the immigration office. 🙁
IF you can't cancel one extension from the current employer and immediately apply for the new extension with the documents from the new employer you're done 😮
After you cancel the current extension if you can't get a 60 day covid extension you could get a 7 day "get out of dodge" stamp for 1900baht and that gives you a week to leave the country. <- as has been pointed out you can't apply for ANYTHING from that 7 days to leave stamp. It means you leave in a week.
You'd have to exit/re-enter the country on a visa exempt entry (which you could extend for 30 days if you needed) to buy you the time between the jobs. AND then you could apply for the Non-B visa inside the country with the new employer

If you are not able to get the COVID extension then you can do a land border visa run to Vientiane Laos and apply for a SETV single entry tourist visa.
That will give you 60+30=90 days stay in Thailand... Giving you time to consider your options.

Your employer will give you a letter to give to your Thai immigration office to cancel your current Non B based extension of stay.
On the specified ending date of your employment...go to the Thai immigration office
And you will need to notify the Thai Labor Ministry to cancel your Thai work permit.

you cannot teach without the legal Thai work permit to teach at the international School and the Non B visa AND or extension approved by Thai immigration.
The teaching contract supports your need for your Non B visa.
The challenge is how do you get your current Non B based extension of stay... cancelled and new one in place in a matter of days.
A seemingly difficult task to do this coming week.
Yet you are to start teaching Thursday August 4th in another province. AND to do so is illegal unless you can get the Schools and Thai immigration offices working together for you.

OR as you are now an extension of stay as a teacher...with the cooperation of your new employer and Thai immigration office in Surat Thani and your current Thai immigration office... explore getting the reason for the extension of stay to be your teaching in Surat Thani.
