My wife and I are wondering about the process of canceling a WP and visas when leaving Thailand. How long do you have once its canceled before you have to leave?

As stated above, no one knows how it goes after Covid. But the rules have not been changed so far (some new rules or conditions were added regarding COVID-19 situation).
As a rule, you can apply for cancelation of your WP and extension based on employment in advance (how long depends on the immigration office you would use). The day of expiration is the day you need to leave.
Then you can apply for another extension for whatever reason with 1900thb fee even if you are not qualified for an extension. Then you will get denied and be stamped for up to (most likely) 7days to leave the country. How many days and when this to-leave-country-period starts also depend on the immigration office.
This is how it works or at least worked when you cancel your extension based on the employment of a non-BOI company.
