TLDR : Answer Summary
Cancelling your work permit in Thailand affects your Non-B visa extension. You must cancel your extension at the immigration office, as the extension is tied to your employment. After cancellation, you may apply for a "unable to travel due to covid" 60-day extension. A supporting letter from your embassy might also help your request for extension.

If you have letter from

Embassy that would help to support request for the extension stay

You say you are on an extension based on employment SO when the terms of that extension change (like you cancel your work permit that lets you work) you need to go cancel your extension at the immigration office too.

You could cancel your extension and immediately apply for an "unable to travel due to covid" 60 day extension.t

IF your consulate offers the 'unable to travel due to covid' letter GET IT, if they don't either print the email they sent you saying they don't issue it when you applied for one OR print a screen grab of the website saying they don't issue it.

Contact your consulate to see if they offer the letter or not
